It's relatively easy to produce healthy olives : you just have to have access to chemicals and treat the trees as soon as you see the first sign of a pest or disease.
It's another question to produce healthy olives while respecting the environment and the consumer : a more sophisticated approach is required and that demands,
- being an attentive observer, regularly present in your orchard
- taking into account that what happens in your orchard, rather than in the region, is most important
- avoid the use of chemicals when an organic treatment is possible
- understanding the physiology of the olive tree and the intrinsic needs of your own trees rather than following the general practices of the region.
- Stimulating the autoimmune defenses of your trees to allow them to flourish on their own.
This thoughtful approach to olive-growing backed by scientific research is practiced by the Federation Mediterraneenne Oleiculture et Sante (FEMOS) and is the approach to which the members of Oleiculture and Health adhere.
Just as a great wine requires the very best grapes, an O&S oil requires perfect olives.
