> AN OIL OF QUALITY
Olive oil can be produced by three different methods :

The
industrial method :
this is the process used by the largest oil mills, employing continuous production by machines, guaranteeing cleanliness, safety, and productivity.

The
artisan method
:
intermittant use of machines. The know-how of the mill's owner is paramount.

« Selective »
method :
it is the result of intensive research led by the Science faculty of the Universtiy of Avignon (doctoral thesis) at the request of FEMOS. Its purpose is to optimise the preservation in the oil of molecules conducive to Health that are present in the olives harvested ; among others :
- Total Polyphenols - E Vitamin - Omegas 6 and 3

The goal is to offer to the consumer an olive oil combining taste, aroma, and nutritional content of high quality.
